Last night there was an epic stand-off between a bar of dark chocolate and I. No matter what I did I just kept meeting his gaze across the room. There he was just strutting his stuff around my counter top, all sea salt and caramel. No respect for the fact that I had commitments. Just thinking to himself “Look at you looking at me……” And then when he peeled back the layer of his outer coat to reveal a deep, dark tan with golden flecks of delicious sun kissed caramel my resolve was lost. ALMOST!
But I pulled myself together, jumped up off the sofa, logged onto Pinterest and found myself a recipe to doctor (based on what Old Mother Hubbard actually had in her cupboards) and came up with these delicious balls of January bliss.
Just add tea.
Good old fashioned supermarket stock – with the optional addition of one fancy (well worth buying) cocoa surprise in the form of Cocoa Nibs. Best described as natures chocolate chips, these are simply the pure, raw, form of chocolate. So nothing added or refined about these little powerhouses. I buy mine in the local supermarket but health food shops stock them too. But like I said – they are optional!
6 ingredients and the ability to measure and stir. Happy days.
1 cup oats (GF if you wish)
1/4 cup maple syrup
3/4 cup Almond butter
3/4 cup desiccated coconut
1/4 cup sultanas
A pinch of salt
1/4 cup cocoa nibs (optional)
Pop all the ingredients into a bowl and mix thoroughly.
Roll/squeeze into about 20 balls and place in freezer for 15 minutes.
Store in air-tight container in fridge.
Even the busiest of souls could manage the 10 minutes it takes to make this! And you will not be disappointed – that is my promise.
