Perfectly Pleasant Pea Pesto with Innocent Drinks & the big grow

I have some news. There has been an addition to our tribe. It was quite the surprise really. Now don’t go getting all excited for the pitter patter of little feet once again. I’d hate you to be disappointed.

No, it’s not a puppy either – but you would be forgiven for thinking it may be, on seeing the treatment afforded to this latest inclusion. It’s greeted lovingly 1st thing every morning by the young whippersnappers chez moi. Welcomed with open arms and integrated lovingly into this humble abode.

So who or what is this?

Our Peas – that’s what. Our innocent big grow home growing kit has been the single most welcome visitor in a long time. Ever changing, evolving, growing…its has managed to capture not only my kids attentions but also their imaginations.

The Peas don’t crave attention. Nor do they ask for much. Which suits me. This is the women who feels a huge burden of guilt over our departed goldfish – deceased for over a year but still mentally scarred over the possibility my lack of diligence with regards to care of water quality played a significant part in their demise.

These pea’s literally grow themselves. A splash of water here and there and Bob’s your Uncle. Way easier than a pet and so much to learn from them at the same time.

My mother was a home economics teacher. To this day the story of one of her more junior pupils participation in the answering of “Where does milk come from?” haunts me.

“A carton Miss” was the genuine, sincere answer. On probing a little further, the pupil elaborated to “Ohhh yes, before that? The supermarket Miss”.

We may take it for granted that our children know the origins of certain foods. This knowledge is hugely important for making healthy choices through their lives. The big grow has shown mine that peas don’t just come from the freezer and planted the seed for further queries with regards to other foods…(excuse the pun – I just couldn’t help myself)

What’s the goal? To get the kids eating some vegetables that they would not have done so before. However, in true Oprah fashion, I also say it is the journey that is important here and not so much the destination. 

Below is a recipe for a really simple Perfectly Pleasant Pea Pesto. Tasty and convenient for quick dinners on the go. I have a jar of it in the fridge right now. Hopefully at the end of our big grow adventure we will have enough peas to make it with our homegrown supply.

Ingredients

Pea Pesto Sauce

1 cup peas

1/4 cup olive oil

1 & 1/2 cups Basil

30g Parmesan

Salt & Pepper

3 cloves of garlic

Juice of 1 lemon

50g pine nuts

Other ingredients 

150g sundried tomatos chopped

4 chicken breasts (optional)

4 tbsp Olive oil

400g-450g pasta

Method

Pre-heat oven to 180C.

Place your chicken breasts on some parchment paper and drizzle with olive oil, salt and pepper. Fold parchment paper so it covers the chicken like a pouch or envelope. Place in oven for 20-25 minutes. Once cooked take out & leave to rest whilst you are making the rest of the dish.

Toast pine nuts in a frying pan over a medium/low heat until they turn slightly golden – this takes roughly 5 minutes.

Add them and the rest of your pesto ingredients to a food processor or blender and blend until smooth. This may take up to a minute.

Bring a pan of water to the boil and add your pasta. Cook according to instructions. Drain & add back to the pan in which you cooked it.

Stir in your sun-dried tomatoes. Add your pesto to taste. You can add some of your chicken juices here too if you wish.

Add to your favourite pasta bowl. Top with your sliced chicken breast & a sprinkling of grated parmesan.
