Darby O’Gill has nothing on me! He may have taken on an army of leprechaun’s but I have a battle of wits with my own set of little people EVERY SINGLE DAY. And my army of smallies are all geared up for an unsurmountable amount of fun & Paddywhackery this St Patrick’s Day. There won’t be a shamrock left unturned – that’s a fact.
But whilst we are out, decked head to toe in 40 shades of green, looking like we stepped straight out of the Finian’s Rainbow set and onto the local streets, I’ll not want to give a thought to what we are having for our dinner later.
But shur, what else could you serve on Paddy’s day, only Bacon and cabbage! Hubster’s favourite meal – they breed ’em well in Kerry, eh? Basic is best in the culinary sense, he maintains. He could just be right on this occasion.
This is my fool-proof ‘bung it all in one pot’ slow-cooker bacon and cabbage recipe. Well fool-proof unless you are me and turn the cooker on to warm instead of high……and end up cooking a curry that night instead. But you get what I mean…..right?
8 potatoes halved.
8 carrots cut into 2 inch chunks
Thyme, parsley and bay leaf
1 onion sliced
2 cups of water or chicken stock if preferred
1 white cabbage, cut into 12 sections.
Place the onion, carrots and potato into the bottom of the slow cooker.
Pop the bacon/ham on top and add the water.
Add the herbs.
Cover and cook on high for 7 hours.
Add the cabbage and cook for a further hour on low heat setting.
Enjoy whilst feeling smug that you managed to have literally no washing up & enough ham leftover for the sarnie’s!
