But first coffee…. and chocolate ice-cream!

Unattended children will be given an espresso shot and a puppy.

Yes we’ve all had a little giggle on seeing this one at various café’s around the country. Can you imagine the horror? Threats such as this are not to be taken lightly and are sure to bring any self-respecting mother out in a cold sweat at the mere THOUGHT of it. 

Giving my child MY coffee is bad enough (depriving me of sleep AND coffee is not a good combo – I need that shot more than the child). Adding a teeny tiny new born version of man’s best friend to the equation would bring a tear to my eye. 

But why is it always about the kiddo’s? Us adults need the healthy option of our favourite treats too. Isn’t the very definition of an adult a person who has stopped growing at either end and is now growing in the middle? Yes.  Are we facing into a middled aged treat free crisis here? Aren’t sugar and spice and all things nice just a recipe for disaster?

Enough of that balony. I want to have my cake and eat it. Here’s a treat high in the right kinds of fats and devoid of refined sugar. It’s not processed, simple to make and simply delicious. Just go easy on the portions, don’t have it every night or alongside the pint of regular choc chip vanilla ice cream you may indulge in. 

This is one for the grown ups! Hands off my mocha kiddies. 

Ingredients:

1 cup of Cashew Nuts (pre-soak for 4 hours) OR 3 tbsp of Cashew nut butter

1 can coconut milk

3 tbsp of Agave/Rice Malt syrup

Pinch of sea salt

1 tsp Vanilla Extract

2/3 Cup of very strong coffee*

75g Chocolate Chips (I use dark but use dairy free if you want to keep it dairy free)

Method:

Place all the ingredients except the choc’ chips into your high speed blender and blitz until smooth.

Pour mixture into ziplock plastic bag and place lying flat in freezer for 6-8 hours.

Break up the mixture when out of the freezer and pop back into the blender and blend smooth.

Add the chocolate chips and give another quick blitz.

Pop the whole mixture into resealable box in freezer for another and serve! Let if soften if needs be – it’s all about the scoops!!

* by strong coffee I mean quite literally blow the head/clung to the ceiling strong. On freezing it looses some of it’s flavour so it has to be stronger than you would drink it!
