Cashew Cranberry & Choc Chip SmashBalls

4pm and I are simply not friends. We haven’t been for nigh on 8 and a half years. There was no major falling out, no Dallas style storming out of the room and slamming of doors in our wake. Our lives just changed trajectory and we lost the spark.

You see, my friends, by the time 4pm creeps around every day I am only fit for the bed. It’s the black hole between lunch and dinner time. Bring dinner forward and you end up half starved at 8pm. Hold off and you end up eating your body weight in your children’s dinners, thereby ruining yours. 

There was time in my 20’s that 4pm and I co-existed in peace and serenity (and afternoon naps post work should I feel the need) but that is all but a dim and distant memory. I do, however, have 1 weapon at my disposal. The perfect solution. A chink in 4pm’s armour per say.

Let me introduce my Cashew Cranberry & Choc Chip SmashBalls.

Whilst delicious, these beauties are packed with punch in the nutritious sense! Cashew nuts have a lower fat content than most other nuts. All but a small amount of the fat in cashews is the good kind – oleic acid – found also in olive oil. This means they are good for your heart health. They are packed full of Magnesium also – which is essential for great bones basically!! They are also great for providing dietary fibres but just eat in moderation – otherwise gas and bloating may be a problem!

Makes 12-15 balls.

Ingredients:

200g Cashew Nuts

180g Dates

50g Cranberries

50g Dark Choc Chips

Pinch of Sea Salt

Method:

Blitz the Cashew Nuts in a food processor until they look like ground almonds and turn out into a bowl.

Blitz the dates separately until they form a little ball of stuck together brown mess (technical term LOL)

Add the cashews back into the date mixture. Add the rest of the ingredients also and blitz once more.

Roll into balls and store in sealed box in the fridge.

My kids absolutely love these little balls of happiness. And a guilt free treat is always a winner in my books.
