Give me all of the chocolate, anytime, anywhere. I am a self-confessed, beyond help chocaholic. It just kinda makes me happy. Chocolate says ‘I love you’ so much better than a carrot in my world. It’s nothing personal carrot – it’s me, not you.
But what to do when you want to stay on track but still want to eat ALL OF THE CHOCOLATE on the face of the planet? How about trying these healthy, gooey, mounds of choccie bliss? Free from refined sugar, artificial preservatives & additives and chuck full of healthy fats. Not to mention the anti-oxidants in the raw cacao. It’s a win-win. You’d be a fool not to.
I had not known until quite recently that you can use some essential oils in you daily diet. I picked orange as what better compliment is there to chocolate really? Besides a cup of tea of course!!
The benefits of wild orange essential oil are said to include supporting a healthy immune system, cleansing the body and an uplifting effect on our bodies and minds.
1 tsp coconut oil (Unmelted)
60g Cacao Nibs
Pinch of Sea Salt
6 drops of orange oil (I used doterra wild orange)
Pop the cashews into the food processor and blitz to break up.
Add the rest of the ingredient and blitz until well blended. This may take several minutes and you can decide on the texture your like by personal preference. (note: here you can alternatively take out the crushed cashews and add the dates on their own to blitz them first – then add your cashews back in alongside your other ingredients)
Shape the mixture into balls. The mixture here will be quite wet so it really is pressing and shaping rather than rolling. This is what makes these balls quite fudgey when set.
Place in fridge in sealed tub to harden.
